🥕 BLACK CARROT: THE REAL VALUE IS NOT IN THE ROOT — IT IS IN THE PURPLE PIGMENT

 

🟣 BLACK CARROT: AFRICA SHOULD NOT ONLY SELL THE ROOT — WE SHOULD EXTRACT THE COLOUR

When most people see a black carrot, they see another vegetable.

When I look at it commercially, I see:

Farm → Juice → Concentrate → Anthocyanins → Natural Colourants → Beverages → Dairy → Confectionery → Cosmetics → Functional Foods → Smart Packaging

This is what I mean when I say agriculture must be designed.

LOOK AT EREĞLI, TÜRKİYE

Türkiye’s Ministry of Agriculture reported that black carrots from EreÄŸli, Konya, were being processed into concentrate and supplied to customers in 25 countries, including markets in the United States, Russia, Europe and the Far East.

The reported factory had approximately 15,000 tonnes/year processing capacity.

This example is historical — the ministry report dates from 2018 — so we should not present those figures as the current 2026 position.

But a July 2025 university report confirms that the same EreÄŸli processing company was still operating and reported exports to 34 countries, with daily processing capacity reaching 1,250 tonnes depending on product.

The company also reported organising production on approximately 30,000–35,000 decares through its own farms and contracted growers across the fruits and vegetables it processes.

That is exactly the model Africa should study:

Factory demand determines contracted production.

Not:

Grow first and search for a market afterwards.


FARMERS ARE CONNECTED TO THE FACTORY

In the 2018 Ministry of Agriculture case study, the processor reported contracting approximately 200 farmers and planning production according to factory capacity.

It also reported approximately 500 indirect jobs across the wider operation at that time.

Again, these are 2018 company-reported figures, not current national employment statistics.

I have not found a reliable current official figure for total employment in Türkiye’s entire black-carrot industry, so we should not invent one.


BLACK CARROT SHOULD BE GROWN FOR AN INDUSTRIAL SPECIFICATION

India provides another useful lesson.

ICAR-IARI developed Pusa Asita, a tropical black-carrot variety suitable for September–October sowing in northern Indian conditions.

It matures in approximately 90–110 days and has an average reported root yield of about 25 tonnes/ha.

The original IARI annual report also described Pusa Asita as containing approximately 520 mg anthocyanins per 100 g.

This is important.

If your target market is natural colour extraction, you should not measure the crop only by tonnes per hectare.

You may also need to measure:

Anthocyanin concentration
Colour strength
Dry matter
Root size
Soluble solids
Acidity
Pesticide residues
Microbiological quality

The industrial specification changes the agronomy.


 FARM MANAGEMENT

Research on black carrots grown in Punjab, India, describes production on deep, well-drained soils, with experimental soil pH around 6.0–7.0, ridge spacing of approximately 25–30 cm, irrigation immediately after sowing and subsequent irrigation during crop development.

The study followed roots up to approximately 108 days after sowing to evaluate quality development.

This does not mean Botswana should automatically copy the exact schedule.

Our protocol should be adapted for:

temperature
soil texture
water quality
variety
market specification
desired anthocyanin content


WHY IS BLACK CARROT SO INTERESTING INDUSTRIALLY?

Because it contains anthocyanins.

Peer-reviewed research describes black carrot anthocyanins as useful natural red, purple and blue food colourants.

A scientific review explains that purple/black carrot pigments can be used in products such as:

soft drinks
fruit juices
jellies
confectionery

and can deliver different colour shades depending on pH.

This means the carrot is effectively becoming a biological colour factory.


PRODUCT 1 — FERMENTED BEVERAGES

Black carrot is a central ingredient in the traditional Turkish fermented beverage ÅŸalgam.

Scientific research has examined how anthocyanins and antioxidant characteristics change during ÅŸalgam fermentation.

This creates another value chain:

Black Carrot → Fermentation → Bottled Beverage → Retail → Hospitality → Export


PRODUCT 2 — CONFECTIONERY COLOUR

Research from Türkiye demonstrated that black-carrot juice concentrate can be used as a natural colourant in confectionery, including traditional hard candy.

That is a completely different industry from fresh vegetable sales.


 PRODUCT 3 — DAIRY

Researchers have successfully studied black-carrot anthocyanin systems as natural colouring ingredients in yoghurt.

Another study reported acceptable yoghurt colour and stability using black-carrot concentrate.

Think about what has happened:

A carrot farmer is now indirectly supplying the dairy industry.


PRODUCT 4 — FUNCTIONAL FOOD INGREDIENTS

A 2024 study demonstrated incorporation of black carrot powder into bread, increasing anthocyanins and other bioactive compounds.

The researchers found acceptable sensory performance at certain incorporation levels.

So the same crop can connect farmers to the bakery and functional-food sector.


PRODUCT 5 — SMART PACKAGING

This becomes even more interesting.

In 2026, ICAR-CIAE reported development of bio-based freshness indicators using natural pigments including anthocyanin extracted from black-carrot peel.

The colour-changing indicator can be incorporated into packaging to provide information about food freshness.

Now think about this carefully.

Even the peel can become an input into food-technology manufacturing.

That is circular bioeconomy thinking.


HOW MANY INDUSTRIES CAN BLACK CARROT FEED?

At minimum, the documented evidence supports commercial pathways into:

1. Fresh vegetable markets
2. Juice production
3. Concentrates
4. Natural food colourants
5. Fermented beverages
6. Dairy products
7. Confectionery
8. Bakery products
9. Functional foods
10. Botanical extracts
11. Cosmetics
12. Smart packaging / freshness indicators

These are industry pathways, not a claim that one country currently has exactly 12 formal “black-carrot industries.”

The distinction matters.


 THE MOST IMPORTANT LESSON FROM TÜRKİYE

EreÄŸli’s model connects:

Geographical identity
→ specialised production
→ contract farmers
→ industrial processing
→ concentrate
→ international customers

The EreÄŸli municipality states that black carrots are grown across approximately 25,000 decares, with about 3,000 families deriving livelihoods from the crop, and identifies exports and natural-colour applications among the sector’s uses.

The municipality also reports approximately 120,000 tonnes of carrots annually in the district, with approximately 50,000 tonnes exported.

Because the page does not clearly specify the statistical reference year for those figures, they should be treated as municipal descriptive figures rather than a verified 2026 annual production statistic.

This is exactly how we should treat evidence responsibly.


WHAT SHOULD BOTSWANA DO WITH BLACK CARROT?

We should not start with:

“How many hectares can we plant?”

Start with:

Which industry do we want?

If we want natural food colour, design backwards:

Buyer specification

Anthocyanin concentration

Required variety

Production protocol

Contract farmers

Harvest timing

Washing

Juice extraction

Concentration

Standardisation

Laboratory verification

Packaging

Export

Then secondary products can emerge:

Powder
Beverages
Food colouring
Bakery ingredients
Dairy colouring
Cosmetics
Smart packaging materials

That becomes a BLACK CARROT BIO-INDUSTRY, not just another horticultural project.

Africa should stop exporting biology cheaply and importing the technology that was built from that biology.

We should own both.
